Best known for | Best known for working completely off the cuff with no cocktail list. Using inadvertent questioning to craft custom drinks for guests and tailoring drinks more to the guests specifications as well as to pair with the cuisine from our kitchen.
Best story from behind the wood | Making a bourbon old fashioned for a guest who specifically asked for the cocktail to be made without sugar. We happily complied using buffalo trace for the bourbon. The cocktail was immediately sent back to the bar for the reason that “it tasted too much like bourbon.”
What do you collect? Spirits…specifically bourbons, gins and amaros. I also love collecting antique glassware which is all used at 86’d.
Favourite thing about your city? The multiculturalism that exists in Toronto is beautiful and you see that cultural influence reflected in the eclectic cuisine and very progressive cocktail scene.
What was the last photo that you took? 1 week ago for a private photo shoot.
Where was your last vacation? Cuba in 2012
Any claims to fame? Claim to fame is being known as “coffee Dave” I was previously a barista before I began bartending. I secretly made and supplied most cocktail bars in Toronto with cold brew coffee concentrates and I was also able to produce any flavor without the use of preservatives. Everything was always organic.
