Who | Eric Clark
Where | Toronto, Canada
Current Bar | Brewhaha, Duke of York
Past Bar(s) | SCHOOL Restaurant, Portland Variety
Favourite Spirit | Bourbon
Favourite Juice | Pineapple
Favourite Classic Cocktail | Sidecar
Favourite Part of the Job | Interacting with people, making them happy. I love the satisfaction of making a great drink though.
Favourite After Work Drink | Beer, usually gravitate towards IPAs. Also shots of Jameson/Jagger on some nights.
Favourite at Home Drink | Selection of craft beers or whatever cocktail I’m trying to make if I scavenged all the ingredients.
Favourite bar in the world | BarChef and Rush Lane across the street. I have a soft spot for the Imperial Pub as well. All Toronto.
Best known for | Being the “cocktail guy” within Imago and the Duke Pups. Brewhaha is the only sub bar of the corporate Duke franchise so I have some creative freedom. I took the opportunity to make/keep improving a cocktail menu. Word has gotten out, and I’ll have random people from the other Dukes or the neighbourhood come in to try them.
Best story from behind the wood | Lots of fun little stories involving wackos/celebrities/police. My favorite might be the time I was working solo and got hit with a flash pup crawl. Only being the 2nd bar on their list these guys went hard, I was slinging cosmos and tequila shots in the hectic 15 minutes. Everyone got a drink though, and they left just as fast as they came. Unknown to the managers/supervisors who don’t always come down to Brewhaha frequently, the nightly manager came down as soon as I was catching my breath. Seeing a trashed bar he started giving me a lecture about the importance of bussing before I could tell him what happened.
What do you collect? House tracks
Favourite thing about your city? The diversity. Not just in culture but everything related to service. You can go to a comedy show, get gourmet sushi, and hit up a rooftop bar all in the same night. I also love how on any given night you can/probably will meet someone from another part of the world and get their perspective. I’ve traveled a little bit, but I’ve met a crazy amount of people from all over the world because of living in Toronto.
What was the last photo that you took? Sent a picture of my dinner to my girlfriend.
Where was your last vacation? Traveled to London last year. Going to New York in April…I love cities.
Any claims to fame? Not to say the same thing twice, but being able to create a respectable cocktail menu within a corporate franchise.
Red or White? Usually white unless I’m having steak or I’m offered a glass.
Cointreau or Grand Marnier? Tough, but it’s gotta be Grand Marnier.
London or Paris? London!
Glass or Tin? Tin 100%
Are you available for freelance gigs? Sure!
