Favourite “at work” memory | That time I made a great lacto-fermentation of a local fruit called Cocuixtle for a Cocktail competition. I travelled like 14 hours in a bus just to realize that I forgot it in the Uber that took me to the bus station. Jaja.
What do you collect? Local ingredients from La Sierra Madre occidental and network of local providers
Favourite thing about your city? The people. I live in a super small town in the middle of a huge mountain where people have kept a deep connection to local ingredients, how to collect them, how to cook them, ferment them or drink.
What was the last photo that you took? Of a weird insect who had no legs and just looked like a cocoon and jumped if you moved it. According to a biologist it’s a beetle going through some changes.
Where is one place that you have never been but would like to travel to? Asia. Anywhere in Indonesia. A place that would be very jungle-ish so the people have a deep connection to nature and local ingredients
Any claims to fame? The current project I work on is one the 120 best restaurants in Mexico and I colab with many great chefs which I do cocktail pairings with. Like Mikel Alonso, Paco Ruano, Chef Tita , Gerardo Vázquez Lugo, etc.
Prosecco or Cava? Cava, everyday
Angostura or Peychaud’s? Both but I had to choose Angostura for sure.
