Favourite Part of the Job | When you’ve hit that flow: You’ve got chits coming in, so you grab your jigger as a couple regulars walk through the door. You give the head nod, shine your smile, finish building your drinks, double strain while you ask Amy in Bar Seat 3 if you can grab her another pint, to which she agrees. Garnish. Set on service. Cruise down to the regulars at the end, clearing any glassware or spent napkins and coasters en route. Jokes about the date Regular 1 brought in the other day are pouring out as quickly as you’re pouring their pints without having to ask what they’re having. Set them down, ring them in, then quality check the food for the couple at the end – don’t forget to tell them to save room for dessert – while you grab the bottle of vodka you know you’ve only got 2 oz’s left of up front and pour Amy’s beer while you’re up there. Turn. Smile. Scan wood for bar maintenance as you cruise back towards service, dropping off Amy’s pint just in time as she takes that last sip of that funky IPA you recco’d and hands you the appreciative evidence (her empty glass) to the sounds of more chits! Glass through dish. Tear chit. Grab jigger. Enjoy the flow.

Favourite bar in the world | The Black Hoof (RIP) in Toronto – not for the service, not for the food or drinks, but because I’ve had some of the best convos sitting on that perfectly lit bar .
Best known for | A plastered smile on my face (likely from years of hostessing) .
Favourite “at work” memory | I’ll need a couple drinks to unpack them all

What do you collect? Passport stamps
Favourite thing about your city? It’s progress. Our food and drink scene have never been better! Competition is fierce but love is strong. Our guests are also more knowledgeable about what they want and what we’re all experiencing.
What was the last photo that you took? A screenshot of a sweet convo I’m looking forward to being reminded of in a few months.
Where was last place you traveled? What was supposed to be five days in Mexico that ended three weeks later in Belize.
