Favourite bar in the world | For me the Employees Only guys are showing us the future of the industry. I also want to check out The Strangers Club in Panama.
Best known for | I hate to think, I can do a lot of shouting. But I’d like to think its my focus and dedication to the industry, I do a lot of work on making sure I push myself harder.
Best story from behind the wood | There’s a few but I’ll never tell. But hopefully the best are still yet to come.
What do you collect? Not money
Favourite thing about your city? We’ve managed to collect some of the best people in the industry. Coming to London because you want build your career in the hospitality industry makes so proud. But we need to do more to inspire British kids to do the same (lecture over…)
What was the last photo that you took? Just came back from Porto, learning all about port.
Where was your last vacation? I love Nice! Try to get there as much as possible.
Any claims to fame? Until recently I’ve tried to keep my head down, as I’mm never sure that I’m good enough. But chances are if you live in London you’ll know something I’ve been involved in.
