Best story from behind the wood | I once over estimated a batch required for an event to the tune of 600 cocktails. Rather than throw out the pre-batched cucumber Southside we decided to clarify the lot rather than chuck it out. Using a kitchen grade blender we added the milk and managed to emulsify the whole batch and ended up with nearly 80 litres of unusable stock. Luckily we had recently acquired an ice cream machine (we actually found it in the cellar and liberated it for better use) and managed to sell Southside ice creams for the next month. The drinks name? The Accidental Antidote.

Favourite thing about your city? It’s a little city pretending to be a big one.
What was the last photo that you took? Of the sunset out the window of my second room (office/walk in wardrobe) in my house in Paddington.
Where was your last vacation? The Hunter Valley
Any claims to fame? I competed in the inaugural Chivas Masters competition representing Australia Took Charlie Parker’s around Australia with the Blends of the World tour with Beam Suntory
