Favourite Spirit | I hate to make the other spirits jealous but forced to choose just one; I would have to say rum.
Favourite Juice | Grapefruit
Favourite Classic Cocktail | Depends on the day, the weather, what I’ve recently eaten.. but I do seem to keep coming back to the Mai Tai.
Favourite Part of the Job | Being immersed in of a world of creativity and sensuous delights that most people only get to visit.
Favourite After Work Drink | Nova Scotia Traditional Method Sparkling after an easy night, shot of Reposado after a hard one.
Favourite at Home Drink | Highballs.
Favourite bar in the world | Right now the one I most want to visit again is El Peqeuño in Montreal.
Best known for | Tiki, my beard and being borderline gigantic.
Favourite “at work” memory | Getting absolutely crushed behind the bar at Highwayman during my first shift, which just so happened to coincide with the first annual Atlantic Cocktail Conference. After the booze cruise with Gn Chan and Sabrina Mailhot almost all of the local and visiting bartenders came through the door and we were standing room only. At half past last call the server’s basically had to pull me off the bar, I had gotten so into the rhythm of shaking, stirring and straining that I forgot to stop taking orders! It was a punishing first shift but the presence of my bartending family and their fun and obscure cocktail orders kept me smiling the whole time.

What do you collect? Motorcycles that don’t run apparently… Also kitchen tools and spices, lots and lots if spices, and the usual bartender paraphernalia.
Favourite thing about your city? I’m gonna cheat and say two things: First off the incredibly open and supportive bartending community and secondly how it somehow manages to feel like a small town and big city all at once.
What was the last photo that you took? A bone in pork chop from a local farm, don’t bother looking, it’s not on my instagram.. was just so pretty it needed to be documented.
Where was last place you traveled? Big trip Maui, small trip Montreal.
Any claims to fame? I was a World Class Canada National Finalist for 2018 and have stood below the amazing Lindsay Jones on a few cocktail comp podiums.
