Bacardi has a legacy in the long fight for Cuba. The ideals of the Cuban Revolution and the unity of the people of different colour, status, cast and creed to achieve a free Cuba is what inspired me to create my cocktail named All For One. Don Facundo Bacardi Masso’s grandson Emilio also truly influenced me. Emilio Bacardi was a true revolutionary who saw racism as not only wrong but as unpatriotic, and did what he could to bring equality to all that he did. I too believe that we are all equal and that there shouldn’t be discrimination based on race, cast or creed. Just as the ingredients of my cocktail All for One are in perfect harmony, we too should unite for a free world, a land governed by all for all.
“La Paz Mundial”
Served in a coupe glass
50 ml Bacardi Carta Blanca Superior White Rum
25 ml Jalapeño Brine
20 ml Fresh Pineapple Syrup
1/2 Bar Spoon Sugarcane Bagasse ash
10 ml Lime Juice
1 Egg White
Shake all ingredients and fine stain into chilled glass. Garnish with Sugarcane Bagasse Dust.
PINEAPPLE SYRUP
In a high-sided saucepan over medium-high heat bring 500 ml of fresh pineapple juice 500ml and 250 gm of caster to a boil. Turn the heat to low and stir constantly until the sugar dissolves completely. The longer you boil it, the thicker the syrup will be when cooled.
