Cocktail: Beets by Jack | Bartender: Jacob Sunny

This cocktail was my submission for the 2021 Gentleman Jack Sour Competition Cocktail. The inspiration of my cocktail is my mom. I also wanted to create a cocktail which showcased the original intention of a whiskey sour, its medicinal nature.

I never liked beets when I was growing up. But my mom used to make beet juice for me and my sisters because of its nutritional qualities. In order for me to consume it, she used to add orange extract to mask the flavor of the beets. Dumb me thought it was orange juice from an exotic orange. This cocktail is a tribute to my mom’s parenting skills. The second reason I choose beets is because of its nutritional properties. Like the initial intention of the whiskey sour, I too wanted to make the cocktail with similar properties.
The flavor notes of the cocktail start as bitter from the Campari, once you pass that, Beets, along with lemon gives a nice earthy sour which is balanced by the orange – honey cordial. It’s refreshing as well as full of vitamins and minerals, like the origin of a whiskey sour.

1.5 oz Jack Daniel’s Gentleman Jack
0.75 oz Beet Juice*
1 oz Orange-Honey Cordial**
0.5 oz Lemon Juice
2 Dashes Regan’s Orange Bitters
Campari Foam***

Add first five ingredients into a shaker tin, and shake vigorously with ice. Strain to remove the ice. Add Campari foam, and shake again (dry shake). Strain into Nick & Nora glass

*Beet Juice
1 cup Beets (peeled & chopped)
0.75 cup Water

Blend everything together. Strain the juice using a cheese cloth. Keep it refrigerated.

**Orange-Honey Cordial
1 cup Honey
1 cup Orange Juice
1.5 Orange Zest (1 and half Oranges)
0.5 tsp Orange Extract
1 oz Grand Marnier

Whisk first 4 ingredients in a small pot over medium heat until orange juice is completely incorporated. Remove from heat. Once the solution is cool down add Grand Marnier and keep it overnight in the refrigerator. Strain the solution. Store in fridge.

***Campari Foam
2 oz Campari
1 oz Water
0.25 oz Lemon Juice
2 Egg Whites

Whisk everything together. Pour the solution into a Whip Cream Dispenser and charge it with 2 N2O cartridge. Store in fridge.
