I had a lot of raspberries that I no longer used, so I created a cocktail so as not to throw them away.
4cl Belvedere Vodka
1cl Green Chartreuse
1cl Lemon Juice
1 barspoon of Matcha Syrup*
Muddle raspberries in a shaker tin. Add remaining ingredients and fill tin with ice. Shake until chilled. Double strain into cocktail coupe. Garnish with a skewered raspberry lightly dusted in icing sugar.
*Matcha Syrup: Make 250ml of hot Matcha tea and add 500g of white sugar. Stir until sugar has dissolved.
