This cocktail is named after the canary diamonds which were popularised by Charles Lewis Tiffany who founded New York’s Tiffany & Co. It has the same colour as the diamonds themselves.

25ml Fanny Fougerat Petit Cigue 6Y
25ml Yellow Chartreuse
25ml Poire Williams EDV
2 drops Saline solution (1:10)
5ml Acid Blend*
Add all ingredients to mixing glass with ice. Stir until chilled. Strain into cocktail coupe.
*Acid blend: 1:10 citric and malic acid to water.
