Cocktail: Celestial Dream | Bartender: Choyce Kotori

The Celestial Dream is a captivating summery cocktail that transports your taste buds to the Mediterranean. This delightful concoction combines the richness of Cognac with the vibrant notes of pomegranate and orange liquor. Topped off with the effervescence of Prosecco, it’s a heavenly sip that evokes the warm, starry nights of the Mediterranean coast, making it the perfect drink to savour on a balmy evening by the sea.

1.5 oz Cognac VSOP
0.5 oz Orange Liquor
0.75 oz Lemon Juice
0.5 oz Orange Pekoe Tea Syrup*
2 Dashes Angostura Bitters
2 Dashes Pomegranate Bitters
1 Skinless Burnt Orange Wedge
4 Concord Grapes

In a shaker, muddle concord grapes with the burnt orange wedge, bitters and syrup. Add remaining ingredients to shaker with ice. Hard Shake for 8-10 seconds.  Double-strain into a rock glass with a king ice cube. Top it off with Prosecco. Garnish with additional burnt orange wedge.

*Orange Pekoe Tea Syrup:
1kg sugar
1kg water
50g Orange pekoe tea
Using medium heat, make a traditional 1:1 Simple Syrup. When the sugar is completely dissolved, turn off the heat and incorporate the Orange pekoe tea. Wait 10 minutes and strain the tea leaves. Tea leaves are organic, so the tea syrup needs to be used within 7-10 days.
