A simple but elegant pineapple tiki cocktail served straight up in a chilled coupe. Made a week ago for the Flor de Caña national rum week competition. You could slam these things back, but be careful, they seem thirst quenching but still contain 2.25 ounces.
2 ounces Flor de Caña 7 year
.25 ounce Espirit de June 1 ounce Pineapple Juice
.5 ounce Lime Juice
.5 ounce Simple Syrup
Combine ingredients and shake on ice until chilled, double strain into a chilled coupe. Garnish with a pineapple slice with a slit for two pineapple leaves on top. 3 dots of Angostura swept into hearts. (Or however you say that)
