Cocktail: West Indies Cricket Club | Bartender: Matt Millard

Inspired by the iconic Daiquiri cocktail, the West Indies Cricket Club comes together beautifully. Bright and refreshing with a start, middle and an end, this riff knocks the one note wonder out of the park! “Howzat?”.

Cocktail: West Indies Cricket Club
1.5 oz Banks 5 Island Rum
0.5 oz Valdespino Fino Sherry
0.25 oz Esprit De June Liqueur
.75 oz Fresh Lime Juice
10ml (2 tsp) Cane Sugar Syrup 1:1
2 level Barspoons of Caster Sugar
Freshly Grated Tonka Bean

Add all ingredients to a cocktail shaker, except the tonka bean. Briefly, stir to dissolve most of the sugar granules. Shake with Ice and fine strain into a coupe glass. Freshly grate tonka bean on the surface of the drink. Garnish with a mint sprig.
