Cocktail: Forty Thieves | Bartender: Mark Cooney

I wanted to create a cocktail using familiar Middle Eastern ingredients play on one of my favorite drinks, the Corpse Reviver No. 2.

2 oz Tequila Patron Roca Silver
0.75 Fresh Lime
0.5 Blanched Mint Syrup
0.25 Cocchi Americano
3 drops Rose Water
Atomized Arak
Pomegranate ice pearl

Garnished: mint and white rose Chill glenncairn glass

Place all ingredients excluding pomegranate ice pearls in tin. Add ice to tin, shake, add 7-10 ice pearls, double strain into glass, garnish with fresh mint and white rose.

Pom Pearls: 10:1 pomegranate juice to Pama liqeuor. Place liquid in pearl ice mold and freeze over night.
