Cocktail: Green Tea Bee’s Knees | Bartender: Keely Dawson

My take on a classic cocktail, simple but complex. I find that the less ingredients a cocktail has, the more important the specific flavours are, and the more crucial the method is to ace. This cocktail is balanced, elegant and crushable.

2 oz of your favourite gin (I prefer Empress 1908, or Tempo Craft)
1 oz Lemon Juice
1 oz Green Tea Honey Syrup*

Add ingredients to a shaker glass and pack with ice. Shake vigorously 25-30x. Strain into a chilled glass and rim with a lemon zest.

*Green Tea Honey Syrup: 1 part honey, 1 part sugar, 1 part heavily steeped green tea
