Cocktail: Honey Green Fizz | Bartender: Matthew Sinagoga

I submitted this cocktail for the Ramos Reel Challenge by Homebar Awards. My inspiration for this cocktail was to recreate a Green Tea Popsicle with a subtle twist. I added grapefruit and smoked honey to balance out the bold green tea flavors. The results were great and I will be recreating this one soon!

Cocktail: Honey Green Fizz | Bartender Atlas

2oz Green Tea Infused Gin*
1oz Smoked Honey Syrup**
0.75oz Heavy Cream
0.5oz Grapefruit Juice
0.5oz Lime Juice
1 Egg White
3 Drops Yuzu Bitters
Club Soda
Matcha Powder for Garnish

Combine all ingredients except soda and matcha powder into shaker. Dry shake without ice for 1-2 minutes. Add 1 Large Ice Cube and shake until Ice has completely dissolved. Add 1oz Soda into chilled highball glass and then open pour from shaker. Let sit for 3 minutes and then create a hole in the foam with a straw. Slowly add more soda until foam rises above the glass. Dust Matcha powder over cocktail for the garnish. Cheers!

*Green Tea Infused Gin: Add 1 Tablespoon of Loose Leaf Green Tea to 250ml of Gin. I used a Japanese Green Tea but use whatever is available for you. Let tea steep for 1 hour then double strain.

**Smoked Honey Syrup: Combine 1 cup of Smoked Honey to a container then add 1 cup of boiling water. Stir until honey is completely dissolved. If you cant find smoked honey syrup then you can use any organic honey.
