*Chocolate Mint Guava Homemade Cordial

Inspired by the Clynelish Distillery on the Northern part of Scotland that experiences very cold winters and iced landscapes. The kind of whiskey produced there are crisp and fresh and make it easier to build on new flavours to compliment the whisky. With the era of cordial, I came up with this cocktail to play around with different complexity in the whisky cocktail.
45m Johnnie Walker A Song of Ice
25ml Chocolate Mint Guava Homemade Cordial*
2 dashes Angostura bitters
Stir over ice. Strain into cocktail glass.
400g of caster sugar
400ml of water
10g malic acid from grated skin of a red apple
10g citric acid
Heat for 10minutes to dissolve
In a container, add the rest of the ingredients to the cordial for maceration:
25g of dried guava
10g of chocolate mint
5g of cinnamon stick
Cover with lid and let it rest for 48hrs in a tight container. Strain.
