1.5 oz Empress 1908 Gin
0.5 oz Pineapple Syrup
0.25 oz Briottet Rose Liqueur
0.25 oz Domaine de Canton Ginger Liqueur
2 Barspoons of 10:1 citric acid solution
Stir and strain over crushed ice into rocks glass.Top with Ginger and Cassia Bark Foam* and garnish with Butterfly Pea Flower dust, Grapefruit Peel and Dried Rose.
*Foam
60g Sugar
15g Cassia Bark
15g Ginger
250ml Water
125ml Egg White
Blend all ingredients thoroughly except egg white. Combine ingredients in ISI Whipper with egg white, chill, shake and use.
