This cocktail was created for the Semi-Finals of the Takes Two to Altos team cocktail competition. The theme for this leg of the competition was “show us your city”.
When we designed this cocktail we came to the conclusion that nothing said Toronto like a spirit forward (Martini-style) cocktail. We wanted to use seasonally forged ingredients, distillates made in our city, and of course sherry.
45ml Altos Blanco Tequila
22.5ml Ramp Aperitif*
3 Drops Saline
Lemon oil & Mezcal Rinse
Stirred and served up in a Nick & Nora
Garnished with a sweet pickled ramp bulb
*Ramp Apéritif:
405g Spirit of York Akvavit (infused with ramp leaves)**
475g Fino Sherry
120g Local Honey
22.5g Lactic Acid
This aperitif was stored in a beeswax lined bottled which brought an added softness to the final product.
**Ramp Infused Akvavit:
200g Akvavit
20g washed and trimmed ramp leaves
Add both ingredients into a vac seal bag. Let stand for 2 hours and filter.
