A refreshingly bitter, sweet and herbaceous cocktail for marmalade lovers everywhere. I’ve always loved combining herbs and citrus, and sage with orange was a match made in heaven! I wanted to make using these two ingredients as easy as possible, so I diminished the need for a simple syrup by using orange marmalade, which is already plenty sweet. Once the syrup was combined with the lemon, CAMPARI, and bourbon, it was almost perfect, but still a touch too bitter! A small pinch of sea salt neutralised some of the bitterness, and Paddington’s Sage Advice was born (couldn’t have a marmalade cocktail without referencing the king of marmalade himself!)
1.25oz CAMPARI
0.75oz Wild Turkey 101 Kentucky Straight Bourbon
0.75oz Marmalade Sage Syrup*
0.5oz Lemon Juice
Small pinch of sea salt
In a mixing glass, combine all ingredients. Add ice and stir until chilled. Strain into a rocks glass over a big ice cube. Smack a fresh sage leaf and use for garnish.
*Marmalade Sage Syrup: Over low heat, combine ½ cup orange marmalade and ½ cup orange juice. Stir until dissolved and then add about 8 leaves of fresh sage. Remove from heat and let steep. Once cooled, strain into a sealable container. Store any leftovers in the fridge.
