A cocktail for Valentine’s day… peppery and pomegranatey… can’t go wrong.
1.5oz Altos Plata Tequila
0.5oz Giffard Caribbean Pineapple Liqueur
0.75oz Lime juice
0.75oz Pomegranate-Schezwan Peppercorn Syrup*
Shake all the ingredients with ice for 8 seconds and strain over ice in an old-fashioned glass. Garnish with dehydrated pineapple.
*Pomegranate-Schezwan Peppercorn Syrup:
1 cup Pomegranate juice
1 cup sugar
8 schezwan peppercorns
2 sprigs rosemary
Heat all the ingredients in a medium saucepan until they are about to reach a boil. Let it cool. Strain and keep refrigerated.
