What is Mezcal?
It is a spirit drink that comes from any cooked and distilled agave.
Mezcal is made by harvesting agaves, cooking them often in a pit in the ground, fermenting them in a vat and then distilling before bottling.
Following the Denomination of Origin, Mezcal must be made in one of 9 Mexican States: Oaxaca, Puebla, San Luis Potosi, Tamaulipas, Zacatecas, Durango, Guerrero, Guanajuato or Michoacan
Mezcal fermentation is carried out using the whole mash from the agave heart, including the fibers.
No non-agave sugars/additives can be used in fermentation
There are 3 categories of Mezcal: Mezcal, Artisanal Mezcal and Ancestral Mezcal
There are 6 classes of Mezcal: blanco or joven, madurado en vidrio, reposado, anejo, avocado con and destillado con (distilled with)
Labels on a bottle of Mezcal must state the following: indicate it is a product of Mexico, in what state the mezcal was made, the category of mezcal, the class of mezcal, the length of maturation (if applicable), alcohol %, which agave(s) were used in production and that the spirit is 100% Agave distillate.

What about Mezcal Agua Santa Espadin?
Made from 100% Agave Angustifolia (Maguey Espadin)
Certified premium handcrafted Joven Mezcal that follows the ancient artisanal practices from Oaxaca.
Only mature agaves (7-10 years to reach maturity) are harvested by hand (machete and hammer).
The agaves are cooked in a ground pit built with volcanic stones, fired by pine and oak wood.
Once cooked, they crushed the agave in a tahona stone, followed by an open air fermentation in Sabino/Pine barrels with no additives or sugars added.
After two distillations, Agua Santa is bottled at 42% ABV.
Mezcal Agua Santa offers a smoky yet smooth citrus and herbal taste to the consumers.
It’s easy to enjoy on its own or paired nicely in any preferred cocktail.

What about Mezcal Agua Santa Pechuga?
The Spanish word ‘pechuga’ directly translates to ‘breast’, referring to the raw ingredient used to make this special mezcal.
Pechuga Mezcal is created by performing a third distillation of our classic Espadin mezcal and funneling the vapour from the boiling liquid through a special blend of turkey breast and spices which are carefully curated to create the unique and delicious flavour of our special drink.
Similar to our other mezcals, Mezcal Agua Santa Pechuga is not aged so that we can uphold and share the pinnacle of flavour which our Mezcaleros produce.
Mezcal Agua Santa Pechuga is bottled is bottled at 46% ABV
It is recommended to consume on its own while celebrating a special occasion.
