Cocktail: Forest | Bartender Atlas

I wanted to create that, Elegant. Elemental. Eternal.

Forest is more than a cocktail — it is a memory steeped in smoke and silence. Inspired by the noble solitude of ancient woods and the quiet warmth of a fading bonfire, it brings together earthy depth and refined restraint. Hints of charred wood, damp moss, and distant ember unfold slowly, like a whisper through tall pines. Designed for the discerning palate, Forest is not simply tasted — it is experienced. A return to nature, dressed in velvet and crystal.

30ml Madeira Cask Finish Whisky (Penderyn Madeira)
10ml Peated scotch (Laphroaig)
30ml Raisins and Pinewood Tea Syrup*
30ml Green apple Citrus Cordial**

Add all the ingredients in a mixing glass, add ice and stir for 10 seconds.  Strain in chilled Nick & Nra glass. Garnish with Luxardo maraschino cherry.

*Raisins and Pinewood Tea Syrup
12g Pinewood tea
300g Raisins (roughly chopped)
1L Water
100g Sugar

1) Soak raisins in lukewarm water overnight in room temperature.
2) Add all in a sous vide bag and cook for 3 hours at 62 degrees.
3) Cool in a ice bath and filter through cheese or muslin cloth into resealable container. Store in refrigerator.

**Green apple Citrus Cordial:
500ml Green apple juice
150ml Water
150g Sugar
15ml Vanilla essence
handful of Apple chunks
15g Citric acid
8g Malic acid
1 Cardamom pod
4g Agar agar

1) Blend all the ingredients except agar agar.
2) Pour 90 ml of this mixture in a pot and add agar agar, bring it to simmer till agar agar is completely dissolved.
3) Slowly add rest of the mixture, whisking constantly till simmer.
4) Ice bath to solidify and filter through cheese or muslin cloth into resealable container. Store in refrigerator.
