Cocktail: The Dragon's Eye | Bartender Atlas

I love incorporating little-known ingredients into my cocktails and I wanted to create a drink with longan, which is an extremely underrated asian fruit berry. This drink turned out to be very popular, it is one of my favourite creations.

1.5oz Longan infused Broker’s Gin*
0.5oz Lillet Blanc
0.25oz St. Germain
0.25oz Simple Syrup
2 dashes of Dillon’s Ginger Bitter

Combine all ingredients in a mixing glass and stir over ice. Strain in a Nick & Nora glass and garnish with candied ginger.

*Longan infused Broker’s Gin: In a container add 25 -30 pieces of Longan (peeled & pit removed). Infuse that with a 750ml bottle of Gin. Let sit overnight in the fridge. The next day, get a muddler or a potato masher to gently press the longan to release all the longan juice, until the gin gets all the longan flavour. End product should be cloudy.
