Being an early childhood educator, I used to sing the german children song “schnappi” to my little humans. After the school was over, I thought to myself “ why not make a drink which shows my other side rather than just being a bartender”.
First, Rim a coupe glass with Tajin. Then in the shaker, add :
45ml Mezcal
15ml Green Chartreuse
15ml Cointreau
20ml Cucumber Syrup*
20ml Lime Juice
Add ice, give it a good hard shake and double strain in the coupe glass. Garnish with a cucumber ribbon
*Cucumber Syrup: Blend 300g cucumber with 200ml water and fine strain the juice. To the strained liquid, add 250g sugar and a bar spoon of salt and simmer until the sugar dissolves. After the liquid cools, add a gram of citric and half gram of malic acid. Stir, dissolve and bottle.
