You may know Remy Savage from such bars as 🔶🟥🔵 located in London and Bar Nouveau in Paris. You may know Remy Savage for the deep care and thought that he puts into everything that he does. How he continuously questions every aspect of his bars – “is this fun?” How he views that a drink is not just a drink – it is the entire experience from what is in the glass to the table/bar the guest is sitting at to everything else that is around that space.  He believes that storytelling is at the centre of the bar experience. Remy Savage challenges us all to truly dive in deep to what bars and drinks can be. We caught up with Remy while in Mexico City for Barra Mexico.

Bartender Atlas: Remy Savage, what city do you work in?
Remy Savage: I work between London and Paris.

BA: What city were you born in?
RS: I was born in Chambéry in the French Alps.

BA: What’s your job title or how would you describe what you do in the service industry?
RS: I guess I work in bars.

BA: When you have a day off, where do you go out to eat and drink?
RS: I stay at home with my family to eat.

BA: What do you do other than hanging out with your family? As a hobby?
RS: As a hobby, well again, most of it is family-related, but then I do enjoy a bit of boxing. And chess. Oh, chess.

BA: Who’s your favourite fictional bartender?
RS:  I didn’t love the film but it had Chris Pratt and Jennifer Lawrence in it… post-apocalyptic stuff, and there’s this bartender that is there that slides and asks all the questions like AI. It’s nice because there’s moments of understanding and  vulnerability of perception and humanity. It’s very random advice. [After some time spent on IMDB, we think that the movie is Passengers]

BA: What’s a piece of advice that you’ve been given that has really stuck with you? It can be about work in bars or it can be about anything else in life.
RS: When it comes to working in bars…I go to your bar or whoever’s bar and they’re all a bit different. I understand what you like [from that experience] and you have to be able to convey it to others. That would be my professional advice. In life? I don’t know… just don’t be a dick.

BA: What’s something that you’re excited about? What’s something you have coming up?
RS: I have to say I have a three-month-old baby. So everything is baby related. I guess professionally we have a few cool projects opening and all of them is about different art movements. Yeah, so every time we’re about to open there’s all these colossal amount of research we have to do for a year and a bit. I’m particularly keen on this research period so I’m excited to research and understanding a bit more of the nuances.
