William Franci (Florence)

William Franci | Bartender Atlas

Bartender Atlas: William, where were you born?
William Franci: I was born in Borgo San Lorenzo in the province of Florence.

BA: And what city do you work in now?
WF: Florence.

BA: How many stops along the way before you started working here at Giacosaa?
WF: Three.

BA: Where do you go out to eat and drink on your days off?
WF: Mostly I love Szechuan Chinese cuisine because I love the ensemble of spices. And if I have to drink, honestly, I’m in a deep beer experimental period but I am not avoiding a good gin martini when I have the chance.

BA: And what do you do for fun on your days off?
WF: I’m usually a game player but I love to watch movies in their original languages. Some workouts but that’s it.

BA: Who’s your favourite bartender?
WF: Honestly, if I have to pick a bartender, it will be Luca Picchi, my friend. The cocktail historian. I’ve been talking with him and living with him for a very long time and he was my first teacher, so he’s an example for me. He’s getting, not aged, but refined like a good wine.

BA: What do you think the best advice is that you’ve ever received?
WF: Be humble. Do not overdo things that you can do in an easier way. And above everything, the moment that you get on top of a stair, there’ll be another one. Be brave.

BA: What’s something that you’re excited about?
WF: Seeing this place grow with us and grow the kids, which are like the young guys that we’re raising since they’re barely 20. I’m almost 30, and I’m honestly saying this, the only people that you want to be better than you are your sons and daughters.
