This cocktail was inspired by a trip in Peru during the Lunar New Year. There is an oasis within the Peruvian town of Cusco, water that has played a central role in the history of Palacio del Inka. Derived from the sacred Saphy and Tullumayo rivers. Fresh water flows via the Incan canals throughout the city. At the time of the Spanish occupation, the conquistadors utilized these ancient waterways to construct the town’s first well, within what is now the courtyard of Palacio del Inka. A small hollow resides beside the hotel’s feature fountain and visitors aware of the water’s hollowed history still toss coins into its depths in hopes their wishes will be granted.

1.50 oz Pisco Porton
0.75 oz Aperitivo Cappelletti
1 oz Guava juice
0.75 oz Freshly squeezed Lime juice
Barspoon of Monin Passionfruit syrup
Add all the ingredients into a shaker with ice and shake well. Strain into a highball fresh ice cubes and top up with sparkling mineral water. Garnish with a lime zest. Enjoy!
