Iain McPherson is the founder of Panda & Sons. He also has a LONG list of accolades that includes Altos Bartenders’ Bartender of The Year at The World’s 50 Best Bars 2024, #1 for Bar World 100 Most Influential 2025 and International Bar Mentor of The Year at the 2025 Spirited Awards. We met him during North America’s 50 Best Bars in Vancouver in April where he did a guest shift at Keefer Bar while the entire room wore panda ears. It was a lot of fun.

Bartender Atlas: Where were you born?
Iain McPherson: Sydney, Australia
BA: What city do you work in?
IM: Edinburgh, Scotland
BA: Where do you go out to eat and drink on your days off?
IM: There is so many to choose from in Edinburgh. I’d say Eleanore, Under The Table and The Palmerston for food, Tipo for a quick lunch. I love pubs, so Kay’s Bar is always a great place for a pint.
BA: What do you do outside of work on your days off?
IM: I do try and keep healthy (this year has been harder), but going for runs and playing football. I also love learning about economics, this has been a secret fascination of mine, ever since lock down hit the world.
BA: What’s the best advice you’ve ever received?
IM: Never stop learning, knowledge is power.
BA: What’s something you’re excited about?
IM: One place I’m looking forward to opening is Dogstar Leith, which will be an elevated gastro pub, run by amazing people.
