I wanted to infuse a white Negroni for summer and make it refreshing.

1.25 oz Monkey 47 Gin
1 oz Luxardo Bitter
1 oz Carpano Bianco
The recipe to batch this drink looks like this:
37.5 Oz of gin
30oz Luxardo Bitter
30oz Carpano Bianco
Trim and chop 1 pineapple add all ingredients to a 4qt cambro Let rest for 48hrs. Strain through cheese cloth and store in fridge. Garnish with lime zest.
